I'd go with a Dremel.
Inside curves are quite difficult to do with a Stanley knife and if you slip you'll screw up the bit you are gonna be looking at forever.

If you find the dremel is too fast, a bosch Oscillating Cutter with a half moon shape bit might be good. I've used it to cut plastic, and it worked great.

Make a template out of cardboard or something mate, as Doc says if you mark it you will notice it all the time, my first set was done with a Stanley knife, bugged the hell out of me until I bought some others, I used a dremmel, just took a little off until I was happy with it.
2011 2.0tdi airlift v2 performance suspension, 20" alloys, modified Porsche Cayenne calipers front and rear with R8 handbrake caliper, Audi RS4 wingbacks, rear seats also, all covered in nappa leather and alcantara, Touran dash, door cards, centre console all trimmed in leather and alcantara, MFSW, 3D cluster, Rockford fosgate and focal sounds with RNS 510 dab stereo, bi xenons, caddy cross rear lights, etc etc etc etc :D
