Fitting RNS315
Will it be a big job to get one fitted and functioning correctly in my 06 Touran?

No.
You should be able to just plug it in and enter the code.
You will need to add a GPS antenna if you don't already have one.
If you get a unit with bluetooth you will have to add a microphone, again if you don't already have one.

Is there a recommended double din surround I would need to get in order to fit it. My touran just has the basic stereo at the moment.

If you have the old Touran stereo with the split surround, you'll need to pick up the newer one from VW or a breakers or maybe eBay.
There are a few depending on your climate control panel and trim colour.

I've no idea what you have but its probably something more like this you need as your touran dash will already have the fixings for the RNS315 or any other of the same generation vw units.

I'm not sure it will have the fixings doc. Isn't the RNS315 from a later generation of cars than my Touran?

Dunno, I've never seen your Touran, maybe it is different to all the other Tourans I've seen before.
