thats looking good, would love to do something like this, I've just been throwing an airbed in so far but would love something semi permanent

Some good ideas here, love the pull out cooker. Top tip though, use Vohringer ply, it's what motorhome builders use and although it's expensive it's a fraction of the weight of regular ply and it comes in a wide range of finishes and edge and corner trimming options. Nice job though. And seeing as your van is 84 hp any weight saved will be a Godsend
