Up and over rear tailgate conversion?
Is this possible?

Up and over onto the roof so it is completely out the way? The tailgates are big piece of kit and I reckon its mounts brackets would need a lot of reinforcing and maybe even modifying to allow it to swing beyond the 90 degrees.

Or are you talking about swapping from barn doors ie 2 back doors to the 1 piece tailgate?
Think it is easier to go from tailgate to barn doors due to the frame being reinforced. You can go the other way ie Barn doors to tailgate but I believe the frame requires reinforcing.
