If I buy a pair of Audi a1 seats are they a direct fit for my 2007 caddy and do I get them from a 2 or 4 door a1 and what model year

Yes, seats from a A1/Polo sized VAG car will bolt straight into your Caddy.
Anything 2005+ should be fine.
If you want quick access to behind the seats then a 3 door donor will be best, if you seldon envisage yourself having to tilt the seat forward then seats from a 5 door will be just as good for you.

Would you not have to switch out to Touran seat bases? Or drill and bolt ?

Nope, it's a case of undoing four bolts per side, old seats out, new ones in, then do the bolts up.
