New purchase a couple of issues

Hi, I've just purchased another Caddy an 05 plate TDI....
Just a couple of issues i've had since i drove it back...

* - temperature only get to the first bar and not the middle, does the Caddy just a normal style thermostat ?
* - the clutch engages ok, but doesn't come all the way up, no crunching of gears, would it just need bleeding i presume it's not a cable clutch ?
