Speed and throttle makes no difference. Definitely sound like its coming from under the dash.

Update.... seems to be getting worse. Conceding defeat and going to remove the dash. It's either that or set fire to the bloody thing.
Made me laugh the other day when I was going on about it again to the missus. She said she couldn't even hear it. Now that I have pointed it out to her she can now not stop hearing it. She doesn't want to ride in the Caddy any more.

OK still not bothered to remove the dash as I'm far too busy preparing to sell me house.
However I am hoping I have found the problem and a possible solution.
Apparently the symptoms I'm experiencing are quite common on the MK5 and MK6 Golfs. So much so VW have produce a service kit for it.
Here is a good link to a good video on how to fit the parts when supplied from ECS Tuning in the USA. I have bought the service kit from my supplier here in Australia and will hopefully get a chance to fit it on Friday.

I've got them on my Touran, though it wasn't exhibiting any noises when driving, just a click at odd times like putting the auto into reverse when on uneven ground etc.
I thought it was more normally a "clicking" when the car twisted through a driveway etc???
Well, hopefully it's what will sort you out! If not, at least you won't have the issue later

Interestingly we've had several days over 30°c in the last two weeks and the noise completely goes away when the weather is hot. As soon as the temp drops it's back again. When I leave for work in the morning it's there. On the drive home it's gone.

It is in the position the sound seems to be coming from and it's about the only part I cannot get to easily.

I hear a similar strange noise sometimes. Every time it's knocking 3-4 times, like a woodpecker
Unfortunately, I found no correlation between driving conditions or others.
It is heard from behind the left side of center console:
