So there aren’t any “pin out” diagrams as far as I know. What you’ve got to do is print out the wiring diagrams as you’ve done then study both cars carefully your notice some stuff is like for like eg t14 plug pin 1 oil pressure switch is the same as caddy as is t14 pin 9 (Earth) (eg only)
The best way I found was to do the theory and then just follow your instructions!
I will warn you it’s not a quick task. It’s always hard to portray exactly how involved the wiring is with a few pictures on here but it’s a LOT of work! But mega when it all comes together

VW diagrams are quite different to what japanese makers use! They info is there, but you have to change mindset to "get" it!

Oem partnr on the steering wheel Im thinking to use are 5K0419091AG, from a Golf GTI -12.

I used a steering column ecu from a 2012 golf GTD, pt number 5K0953549B.
Depending on your spec of vehicle your need to change the stalks if you have MFD buttons on your stalk as it will conflict with the multi function steering switches!
Your also need to code J519 accordingly depending on your spec but that’s pretty simple.
This is what I done with mine anyway and that’s a 2011

As for cleaning the long and short answer is a load of elbow grease and a lot of prep before painting! I’m very sad, as you may have guessed

I'm sure claudiu of vcds diagnostics in hemel Hempstead can do this.
Used him in the past for a bit of coding work. Nice guy, extremely knowledgeable on the vw audi scene.
