Maybe a resistor connected to the EGR plug across the 2 sensing cables, could trick the ECU to not give a CEL.
What you're thinking of is an egr simulator/emulator, and it does exist. My caddy had its egr mapped out but I had one on a ford transit and it worked a treat. It's a little box that sits in between the MAF and EGR connectors and gives the ECU the MAF reading it expects based on the commanded EGR. They come with a blanking plate too.

The good thing about them is they're reversible.

Bit of an update from my end, found the idling issue to mainly occur when the van sat for a day or two. Decided to give the engine bay a deep clean the other day after posting to eliminate any dirty/poor connections and just ensure there wasn’t anything else obvious. Just went to start up for the second time today without driving anywhere and hopefully without jinxing it, the issue hasn’t resurfaced, and that was 2 full days of sitting.
Will update again at the weekend as it’s due a trip out to the beach.
Booked in for an MOT in 3 weeks and asked for a full check over (done by a mate so asked for honest opinions on any work that it may need).
Like I say, will keep posting as I learn more!
