From memory I think I paid around 350-400 quid to get mine replaced, have to take a lot of stuff of to get access.

Update… just picked the van up from having the stat changed.
Work was done by a reputable garage and he showed me the part that was replaced. Even mentioned how much of a nightmare it was.

It’s still doing it 😭😭😭 F#$k

My 1.6 caye takes a bit too long to warm up too.. especially compared to my partner's 1.6 blue motion which warms up very fast. I first thought it was the thermostat but the pipes to and from the radiator stay cold until it reaches 90ish degrees.
A couple of days ago while playing with VCDS I realised my EGR is always 100% closed. It must have been accidentally deleted when I got it remapped. I say accidentally because I just went for a simple stage one tune. They must have chosen the "wrong" preset.
Might be worth checking if yours is working.
By the way, my DPF regenerates with no issues, mostly every 750km.

Is it DSG or manual?

DSG's have the DSG inline thermostat in the hose too.

Mine was doing the exact same. I saw a similar post a few months ago, and replaced the thermostat. Problem solved after a new thermostat.

Which one controls the dash gauge? Surely it isn’t both?

Is your radiator hose (near the airbox intake) warm when the temperature is at this level?
If so, I'd suspect the thermostat you have had fitted is stuck open.

Pretty much every VAG diesel I have owned has been like this, the worst of which was a T6, as soon as winter hits they struggle to warn up and maintain temp.

Doc, if you mean this pipe then yes, it’s warm but the temp gauge hasn’t moved after a 10 minute drive. It’s a new stat so is there a reason it would/should be stuck open?

Parts fail, you get it all the time.
I hate to think the amount of times I've had components fail on fit.
Essentially, that radiator pipe should be quite cold until the temperature of the coolant is above the opening temperature of the thermostat. I believe the stat for yours is rated at 84°C.

My 1.6tdi doesn’t warm up properly in the winter.

May have to chuck a stat on it see if it makes a difference
