That's what I've used to fit an aftermarket camera to my VW head unit and it does work.
Don't remember there being any instructions with mine but I found the below diagram on the web and wired it that way.
I don't know if the head unit needs to be programmed/coded to work? When I bought it I was told that without a camera I'd get a blank screen when I went into reverse which I'd say means the van switch's the display over and not a signal from the camera. But I've also read that the camera sending a picture signal switches the display.
The wires going to the reversing light switch the display.

The reversing light wire isn't connected to the head unit on mine, it only triggers the camera to come by switching on the relay box at the back.
It's only the RCA cable that runs from the back to the front of the van. The converter box must generate a 'reversing light' signal when it detects the RCA has a signal on it.
If I knew what pin on the multiplug was the reversing light input I could trigger it directly from the reversing light or a 12v feed, which the OP could do as fault finding to check if the converter is working or not.
Don't know if this is a help but I'm working on my van and when I went to move it the rear door wasn't fully closed, had the red warning symbol on the dash. The reversing camera didn't work even though the reversing lights were on.
Closed the door property and it works. Just tested again and it doesn't come on unless the rear doors are closed. No idea how it knows this but it does seem to be the case.
